What's for Dinner? White Bean Chili

It's back!!!! It had been brought to my attention a few times that I've not shared any recipes of late. Part of that is because I just haven't been cooking that much during the summer. It is about time to get back to it! I'm sure the boys would like it if I actually fed them more often. I'm just trying to make them self sufficient. Their future wives will thank me.

Today I made White Bean Chili. This recipe was super, super simple and pretty tasty. A great throw together lunch or dinner. The only change I made was to add a medium size potato.

White Bean Chili - Fitness Magazine
Makes: 4 servings
Prep time: 25 minutes
Cook time: 30 minutes


Ingredients
3/4 pound lean ground turkey
1/2 cup onion, chopped
1 garlic clove, minced
3 1/4 cups water
1 can (15 ounces) great northern or cannellini beans, rinsed and drained
1 can (4 ounces) diced green chilies ( I used hot and in the future I think I would add another can)
2 teaspoons instant chicken bouillon granules
1 teaspoon ground cumin
1/4 teaspoon black pepper
2 tablespoons flour
1 medium potato diced (my addition)

Directions
1. In a large saucepan, cook turkey, onion, and garlic until turkey is no longer pink.
2. Stir in 3 cups of the water, beans, undrained chilies, bouillon, cumin, and pepper. Bring to a boil; reduce heat and simmer, covered, for 30 minutes.

3. In a small bowl, stir together the remaining 1/4 cup water and the flour. When chili is ready, add flour mixture and cook for 1 minute more to thicken. Serve

What a perfect dinner for this past weekend, eh? Man it was so cold and I thought about chili all day! Looks so yummy ... and healthy! :)
