What's for Dinner? Chocolate Buckwheat Bake

Well this wasn't for dinner, but I guess it could it be, it could most certainly be dessert and it was/is a fantastic breakfast! It's just to, to good not to share! This comes from a food blogger here in Colorado who's blog I stalk. She also introduced me to Scottish oats, I rarely ever eat rolled oats anymore the Scottish are just that good. (Although I actually just grind up steel cut oats a little. ) Now she is responsible for introducing me to buckwheat. I've been using flax and chia seeds for awhile now and this recipe contains both of them plus the buckwheat. All of these contain tons of fantastic stuff for you. If you don't know about them you might want to do some checking on them. And buckwheat despite the name is gluten free for those of you with wheat issues.

Chocolate Buckwheat Bake

1/4c ground raw buckwheat flour [grind raw groats into powder]
1T raw buckwheat groats (I removed one tablespoon from a measured 1/4 cup and then ground the rest. That made almost 1/4 c ground)
1T chia seeds
1 flax egg [1T ground flax meal + 2.5T warm water, whisked] or 1 egg white
1/2 banana
2T unsweetened almond milk (I've used both soy and skim)
1T maple syrup (since I'm always trying to cut back on calories I used Stevia about 1t could be sweeter if you wanted. )
1T cocoa powder (I used special dark cocoa)
1/2t cinnamon
1.5t vanilla extract
1/4t almond extract (I didn't use this)
1/4t baking powder

Whisk flax egg and let sit for 5min.
In a bowl mash the banana until egg-like.
Whisk in milk, vanilla, almond extract and maple syrup.
Mix in buckwheat flour, groats, chia seeds, cinnamon, cocoa powder, + baking powder until well combined.
Mix in flax egg until combined.
Grease a microwave safe bowl, or dessert cup. I used a dab of coconut oil on my finger to grease. (I didn't really find it necessary to grease if you are eating it out of the bowl)
Cover with a paper towel and microwave about 1min 30sec – 1min45sec. Top with peanut butter or fruit if you would like. Heck top with carmel or ice cream....ok maybe not for breakfast..





Easy-peasy and oh my gosh is it good!!! Although it looks really sweet and chocolaty and it is, it's really not to much for breakfast. The whole buckwheat groat give it this great little crunch and it is very filling, in fact you could probably make this 2 servings and serve with some fruit...if you could control yourself and only eat part.



But don't count on only being able to eat 1/2.

Psstt...there is also a pumpkin version which I made yesterday...I mixed a little cream cheese and stevia and "frosted" it...you don't even know.....heaven!

Deb they really aren't as sweet as they look. And the good part is that it's just one serving so you don't have to stare at it!
